Healthy Vegan Blueberry Oatmeal Muffins

You guys remember that time I told you I ate pretty much 2 batches of muffins to myself in a 48 hour window on my get to know me post? I decided to share that recipe with you! These healthy vegan blueberry oatmeal muffins are seriously the best. You can have them as breakfast, a snack or dessert. What I love most about them is that there is nothing bad for you in them, it’s all clean eating. Plus you can decide on a few taste factors because the recipe is super customizable. Example: I drown mine in cinnamon. You don’t haveeeee to do that but I’m obsessed with cinnamon so I always put way a tone. Some times I wonder if I should try to do that Cinnamon Challenge because I swear I eat so much that I can barely taste it anymore, but then I think about the consequences and how I might be put off of cinnamon after that..

 

Anyhow, most recipes I find tell you to put almost a cup of sugar in your muffins which is just ridiculous. I can see 1/2 cup for a 12 dozen batch but really.. a cup of white sugar? As a health nut and clean eater I find that high. I think people get caught up in how Grandma used to bake so we are programed to put everything with lotsa butter and suga’ to make it taste good. Not the case! I put a 1/4 cup of honey or maple syrup in my muffins and it tastes sooo good. I also replace butters with coconut oil. Or, if I’m feeling super healthy – a ripe avocado. It’s amazing!

 

Another thing is the oatmeal. I can’t remember the last time I baked with anything besides oatmeal or coconut flour. All you have to do to make oat flour is blend the oats until they turn into a powder. It’s super easy and oatmeal has so many healthy properties like burning fat, it is gluten free and is low in calorie.

My Healthy Vegan Blueberry Oatmeal Muffins

 

2 Cups Oat Flour

3 tsp Baking Powder

1/2 Sea Salt

1/2 Unsweetened Cashew Milk (or any non-dairy milk)

1/2 Cup Melted Coconut Oil

1/4 Cup Maple Syrup (or any preferred sugar)

1 Ripe Banana (mushed)

1 1/2 Cups Blueberries

1 TBSP Cinnamon (optional)

1/3 Cup Slivered Almonds (optional)

1 tsp Vanilla Extract

 

 

Directions: Heat oven to 375. Mix dry ingredients in a bowl. Next combine liquid ingredients – sweetener, milk, and coconut oil together and warm up a bit. Microwave can work. Next mix dry and wet together. Stir in blueberries and banana till just mix. I used frozen blueberries so the batter stiffened up quite a bit which made it easy to work with. For sweeter muffins add another 1/4 cup of sweetener.

 

Grease muffin tins and pour batter in till it just hits the rim. They don’t puff up a lot so you don’t have to worry about it over flowing to much. Bake for 20 minutes or until cooked through!
