Since winter I have been on an oatmeal kick and even though I usually switch back to blueberry smoothies in the summer months, I am still enjoying a nice warm bowl of blueberry oatmeal in the mornings. Recently I started adding protein powder to my oatmeals so it will help keep me fuller longer!
Since I don’t have a lot of time on weekday mornings I opt for this quick and easy oatmeal dish that can sit on the stove while I down more coffee than your average human! It’s a very simple recipe but it’s one of my favourites!
Cinnamon Blueberry Protein Oatmeal
- 1/3 Cup Quick Oat Oatmeal
- 2/3 Cup Water
- 1 Cup Frozen Blueberries
- Cinnamon to taste
- 1/2 Scoop Vanilla Vega Protein Powder (optional- does give it that protein powder taste)
- 1 tsp vanilla extract
Bring oatmeal and water to a boil. Turn to simmer or lowest heat. Add frozen blueberries. Cook till blueberries warm up (if using fresh blueberries the recipe won’t take as long to cook). Once finished stir in protein and cinnamon and voila! Easy peasy oatmeal. You can drizzle with honey or add any toppings you like such as coconut or banana. Another delicious topper would be crushed walnuts or almonds for some added crunch!
