If you have read some of my posts you will know cookies are my weakness. I was that person who made a batch of chocolate chip cookies just to eat the cookie dough. My moms been known to make me cookie dough and sending it home with me on family visits..
Now that I am a healthy adult I needed to figure out how to make healthy yummy cookies that wouldn’t make me regret eating them. You can find this really yummy chocolate chip cookie dough recipe here that I bake religiously. During the Christmas season though, I wanted to be a little more festive and vegan sugar cookies seem to be the way to go. Now this recipe has become a staple in my apartment. It’s so easy and is grain, dairy and sugar free. It’s also keto diet friendly if any of you are on that.
When you are eating for nutrition everything changes! You can eat the whole batch and not feel bad. I mean you shouldn’t anyways, a cookie’s not going to kill you, but this is just the style of dessert I like so I wanted to share it with you.
Also something I should mention is these vegan sugar cookies are made with my new favourite sweetener – Monk Fruit. Monk fruit is amazing. Like actually amazing. It smells so good too, like cake batter or cupcakes. It tastes like good old sugar but better because the smell compliments it really nice. I don’t know if I’ll ever go back to normal sugar after trying this. You can find monk fruit cheap online like here or find it in your local organic store. I swear by this brand 🙂
Vegan Sugar Cookies Recipe
1 Cup Almond Flour
1 TBSP Monk Fruit
1 TSP Vanilla Extract
1/2 Coconut Oil
Melt your coconut oil. Then mix all ingredients in a bowl till they are nice as constant. If you want sweeter just add more monk fruit. It’s completely natural and tastes amazing! Plus it’s zero calories. But read more about that here. Also I like to use white vanilla extract because I think it tastes and smells more cake battery.
Next all you have to do is grab a spoon and start making them into little balls. To make them solidify just pop them in the fridge and you are done.
Also something I thought I’d throw in is don’t be scare of oil. I know a lot of people say oil is the devil, especially high carb low fat vegans (if this is you no hate! just my opinion) but I personally thrive off a high fat diet. I drank the koolaide of high carb life is the best life and I just.. it didn’t work out for me. I’m a big believer in listening to your body and my body says fats are king. I don’t bloat anymore, I am fuller for longer and it’s actually helped me get over this 3 year weight plateau.
So listen to you and don’t worry about the amount of fat in this recipe. It’s super satisfying and delicious 🙂
