Since adapting to a healthy lifestyle I find myself craving good, nutritious food. I seem like a loser at family gatherings when everyone is lusting over sugar filled desserts while I find myself looking for dates or something more natural. I still crave cookie dough once in a while, just not in the way I used to enjoy it. Which brings me to this recipe.
I used to love making that healthy cookie dough from Healthy Katie but I have a very useless magic bullet so trying to blend chickpeas together became a frustrating nightmare. At one point my bullet started smoking sooooo that was that. Luckily oats are a dream to blend together and they’re completely healthy! Because I’m on a superfood kick I always try to throw these “exotic” ingredients together for some wellness flair, and I got to say it’s been fun making health foods.
All you need is a few simple ingredients, a wooden spoon (I find this makes the dough.. nicer?) and a cute little bowl. You can make this into one or two servings. And if you aren’t a dough person like me pop these into the oven once you’re done and bake! Here’s my healthy cookie dough recipe:
Healthy Cookie Dough Bites
1 cup oat flour
1/4 peanut or cashew butter
pinch of baking soda
2 tbsp maple syrup
1/8 – 1/4 cup almond milk
dash of sea salt
pinch of cinnamon (optional)
1 tsp vanilla extract
1 packet dust
Directions:
Blend the dry ingredients together. You can do this when you’re making your oat flour so every thing’s nice and blended together. After mix the dry ingredients together and then pour into the flour. Don’t be generous with the almond milk or you won’t get the cookie dough texture. I don’t like my cookie dough to sweet so I use a few drops of vanilla stevia mixed with maple syrup, but the great thing about this recipe is you can make it your own! Make it a sweet or as non sweet as you want.

I think I’ll need to make these to help me when I go through the sugar/bad food withdrawals! YUM. I also used to make one with chickpeas but it was hard (and annoying) to put them in a food processor all the time!
